Stirfried Ginger Chilli Prawns with Quinoa Fried Rice

Who doesn’t love a good stir-fry!

I certainly do, and today I’m tweaking the humble stir-fry and giving it a modern nutritious twist.

Quinoa was known for thousands of years as the “gold of the Incas” as they believed it increased the stamina of their warriors.

It was also referred to as the “mother of all grains” and was believed it to be sacred.

Quinoa is well known as a superfood, but why is it actually good for you?

Well for one, quinoa is gluten free and has almost twice as much fibre as other grains.

As well at this it contains all nine of the essential amino acids, and is high in minerals like Iron and Magnesium.

Today I am going to show you how to make Stirfried Ginger Chilli Prawns with Quinoa Fried Rice.

Ingredients

  • 1 cup (200g) Quinoa white or red
  • 2 teaspoons of sesame seed oil
  • 2 teaspoons of peanut oil
  • 500g Black Tiger prawns
  • 2 cloves of garlic thinly sliced
  • 20g of ginger grated or cut into thin matchsticks
  • 100g sugar snap peas
  • ¾ cup of frozen baby peas
  • 1 long fresh chilli
  • 1 medium brown onion : thinly sliced spears
  • 1 spring onion
  • Coriander one bunch
  • 2 tablespoons of kecap manis
  • One handful of cashew nuts

Method

Cook quinoa in a large saucepan of boiling water for 12 minutes or until tender. Drain and ideally refrigerate uncovered overnight.

Heat the oils in a large frying pan on a medium heat. Add the garlic, ginger and chilli to infuse the oil.

Turn the heat up and add the dried, thawed prawns and begin to turn evenly. Add the onion, baby peas, sugar snap peas, and spring onion.

Finally add the Kekap Manis and quinoa. Stir fry for a further minute, then serve garnishing with chopped coriander leaf and remaining chilli.
